In 1998, City Brew opened its first location in Billings, Montana, and quickly became a popular gathering place for coffee aficionados seeking a vibrant atmosphere and exceptional coffee.
Initially sourcing roasted beans from a reputable supplier, we soon realized that our customers deserved nothing but the best. This drove us to invest in state-of-the-art roasting equipment and to recruit certified roast masters dedicated to bringing out the full potential of every bean.
These improvements led to the rapid expansion of City Brew locations across Montana, Wyoming, North Dakota and South Dakota (and served at restaurants and convenience stores nationwide).

A City Brew Coffee Bean’s Journey

Frequently watered and grown in the high elevations, the coffee tree develops coffee cherries. When the cherries turn bright red, they're ready for harvest. Only the perfectly ripe cherries are used to produce the best coffee in the world.

To ensure no underripe fruit has sneaked in, some cherries are dried while others are processed in a water bath - the ripe cherries sink, while the less ripe float.

Over the next day or two, the skins and pulp dissolve off the seed – what we know as a coffee bean.

Wet beans aren't luscious brown yet—they're still green and prone to spoilage. Quickly drying to nearly a tenth of their original weight ensures they are in prime condition for roasting.

City Brew carefully sources these beans, choosing only the top 2% of all beans on the market. They are then shipped to Billings and roasted in our state-of-the-art roasting facility.

Many are used in the shops to produce the caffeinated cup of coffee you enjoy while socializing, relaxing, and otherwise out and about. But then some are packaged to be sold on shelves, or they are shipped right to your door so you can caffeinate anywhere – from the home to the mountains and beyond.
